Pointing the prow towards the enemy grants you durability thanks to the 75 armour and the upgrade for 75 shield armour.
But their weapons have a 270 degree arc, you lose no firepower going broadside and manoeuvring.

The angles are 180 broadside/front.
If you highlight any weapon system in game you'll see a 270 degree arc. This is because there are 2 of each type of battery, 1 is firing left/front, the other right/front. They overlap in the frontal 90 degrees. Tau ships lose half their firepower from broadsiding.

Exactly, I don't know what is so hard to get about that

the guns don't shoot through the ship

just incase people still don't get it I drew a nice simple picture with arrows and everything (the line on the ship represents the cut off of each weapons firing systems)

Yep, decided to test it just now, you're right, the tooltips are just very misleading.
Just never noticed a drop in damage when manoeuvring.

yeah, well as for the custodian, I think they should make it like what it is in the actual TT, where you choose if you want ships attached to the grav hooks, which would bring the custodians actual value down to 330 points (since escorts are a bit of a weakness, not a strength with the Tau anyway, I don't want escorts :L)

The Dhow is amazing... That's literally the one good escort the Tau have and it's the best Escort in the game imo.

As for a Custodian without hooks, I'll see about getting it added in the mod.

It might be a good escort, but escorts rack up the price and 3 of them really hurt the custodian later on, once all 3 of them die thats pretty much a 10% chance of insubordination, that would leave you with the mutiny debuff, which really does hurt it
