The tau are fast enough to keep one enemy ship in frontal arc for most of the time. In case of the Custodian its harder but it got bombers and escorts exactly for that purpose. And you forget that your magic recipe for defeating tau involves outnumbering them 2 to 1?

Step 2: Tau is not full retard, Tau turns prow to one chaos ship.
Step 3: Tau blows up that chaos ship.
